Sweet Spring Syrup
Way up north in Canada, in Québec to be precise,
spring only means one thing…
Maple syrup!
Cold nights and warm days make the maple sap run thick and sweet.
We tap, tap, tap the trees.
The sap drips, drips, drips into buckets.
Next it boils, boils, boils over hot wood fires.
Finally, the syrup pours, pours, pours.
We pour it on everything at our sugar shack!
Eggs, ham, potatoes, baked beans, pork rinds, meat pies, crêpes,
but the best thing to pour it on is...
Snow!
Maple taffy on the snow.
This is how we do it.
Grab a popsicle stick and line up!
Sticks up!
Syrup pours.
Ready...
Set...
Wait!
Too fast and the syrup won’t stick!
Too slow and the syrup will be full of snow!
Now!
Roll!
La tire d’érable parfaite!
